Bologna has been feeding Italy for a thousand years.
Under the porticoes, the city keeps a larder the rest of the country envies: mortadella, Parmigiano, hand-rolled pasta and a market district that has hardly changed in centuries.
We'll walk it with a local guide, learn to shape tortellini at the table, and then head out into Emilia-Romagna itself — to a dairy where the wheels are still made each morning, and to a family acetaia in the Modena hills where balsamic vinegar is aged in a ladder of barrels.
November is a fine month for it. The autumn light is soft, the truffles have arrived, and the tables are generous.
A small group, a proper Italian larder, and three nights in the most delicious city in Italy.
11–14 November 2027 · Four days
The day-by-day itinerary
Markets, pasta and the producers of Emilia-Romagna, at a pace that leaves room for a second espresso.
Day one · Thursday 11 November
Arrival and the first bowl of ragù
- Arrive in Bologna and settle into our hotel under the porticoes, minutes from Piazza Maggiore.
- An evening aperitivo in the square, then our first supper together: tagliatelle al ragù, made the way Bologna insists it should be.
Day two · Friday 12 November
The Quadrilatero and a lesson in sfoglia
- A morning food walk through the Quadrilatero's narrow streets — mortadella, Parmigiano-Reggiano, cured meats and aceto balsamico, tasted with the people who sell them.
- An afternoon at the pasta table with a local sfoglina, learning to roll and shape tortellini by hand. What we make, we eat.
Day three · Saturday 13 November
A day among Emilia's producers
- Out of the city to a Parmigiano-Reggiano dairy, to watch the morning's wheels being made and taste the difference that age makes.
- Lunch in the Modena hills, then a visit to a family acetaia to follow balsamic vinegar from cooked must to barrel. Back to Bologna for a free evening.
Day four · Sunday 14 November
Porticoes and a farewell lunch
- A slow morning: the seven churches of Santo Stefano, or the long portico walk up to San Luca if the weather is kind.
- A final Sunday lunch of Emilian specialities before you make your way home.
Producers and restaurants are booked with our hosts and confirmed with you before departure.
