Party food that keeps people standing around the table rather than sitting down to a formal meal. Two favourites, and the full spread.

Irish Cheese, Charcuterie & Pickle Board

A good board is not about buying ten cheeses. It is about contrast: soft, hard, blue, cured meat, something sharp and something sweet.

Serves 8–10 · Prep 20 mins

Method

  1. Take the cheeses out of the fridge 45 minutes before serving.
  2. Arrange with room between them; add charcuterie in loose folds.
  3. Fill the gaps with pickles, apple, nuts and small bowls of chutney or honey.
  4. Put crackers and bread on a separate board so the platter doesn't get crowded.

What to pour: Chenin Blanc, dry Riesling, light Pinot Noir or cider.

Big Tray of Garlic, Chilli & Lemon Prawns

A large platter of hot prawns is one of the quickest ways to make a gathering feel celebratory.

Serves 8 · Prep 15 mins · Cook 10 mins

Method

  1. Heat the oven to 220°C fan with a large tray inside.
  2. Toss prawns with oil, garlic, chilli, lemon zest and salt. Tip onto the hot tray and dot with butter.
  3. Roast for 6–9 minutes until just cooked.
  4. Squeeze over plenty of lemon, add parsley and serve with bread for the juices.
