Ireland's grass-based dairy tradition gives butter a natural place in our kitchens. The point here is not nostalgia: butter is a working ingredient. It carries herbs under the skin of roast chicken, browns into a nutty sauce for vegetables and turns warm soda bread into something that barely needs embellishment. Buy the best you can justify, keep unsalted butter for cooking when you want full seasoning control, and use salted butter shamelessly at the table.
