Hake, pollock, mackerel, mussels, crab, prawns and salmon all deserve a place in everyday Irish cooking. Instead of arriving at the fish counter with one fixed species in mind, ask what is best that day. A flexible recipe is often a better recipe: hake can replace cod, pollock can go into fish pie, and smoked mackerel can become lunch in minutes.
